Spiced Cupcakes With Cream Cheese Frosting Recipe

Ingredients

  • 1 1/4 c. all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp freshly-grated nutmeg
  • 1/4 tsp grnd cloves
  • 1 pch salt
  • 1/4 c. vegetable shortening
  • 1/4 c. granulated sugar
  • 1 lrg egg
  • 1/2 c. unsulfured molasses stirred together wit
  • 1/2 c. boiling water
  • 4 ounce cream cheese softened
  • 2 Tbsp. unsalted butter softened
  • 1/2 c. confectioners' sugar

Directions

  1. Preheat oven to 350 degrees.
  2. In a bowl, whisk together the flour, the baking soda, the spices, and a healthy pinch of salt.
  3. In another bowl, with an electric mixer cream together the shortening and the granulated sugar, beat in the egg, and beat in the flour mix alternately with the molasses mix, beating well after each addition.
  4. Divide the batter among 12 paper-lined 1/2-c. muffin tins and bake the cupcakes in the middle of an oven for 15 to 20 min, or possibly till a tester comes out clean. Turn the cupcakes out onto a rack and let them cold completely.
  5. In another bowl, beat together the cream cheese, the butter, and the confectioners' sugar till the icing is fluffy and spread the icing on the cupcakes.
  6. This recipe yields 12 cupcakes.
  7. Yield: 12 cupcakes
