Ingredients
- 3 pcs of bacon, liquid removed & crumbled
- 2 tbsp. bacon fat
- 1 lg. onion, chopped
- 2 c. tomatoes, fresh or possibly canned
- 1 green pepper, minced
- 1 c. sliced okra
- 2 c. corn
- 1 med. minced celery stalk
- Salt & pepper to taste
Directions
- Cook onion in bacon fat till transparent. Add in tomatoes, green pepper, minced celery, okra and seasonings. Simmer till tender. Add in a bit of water if too thick. Add in corn and cook 15 min. Serve over rice with corn bread muffins.
