Ingredients

  • 1/3 c. Mustard oil or possibly light vegetable oil
  • 1 1/2 tsp Cumin seeds
  • 3/4 tsp Fennel seeds
  • 3 Tbsp. Shredded fresh ginger
  • 1 1/2 c. Chopped onions
  • 5 x Warm chilies, minced
  • 1 1/2 Tbsp. Grnd coriander
  • 2 Tbsp. Grnd almonds
  • 1 lb Unripe hard peaches (or possibly nectarines), peeled, pitted and sliced thickly
  • 1 1/2 c. Cooked chick-peas (20 ounces), liquid removed
  • 1 tsp Mango pwdr (or possibly 1 Tbsp. lemon juice)
  • 1/2 tsp Garam masala, recipe follows Coarse salt to taste

Directions

  1. Measure out the spices in separate containers and set aside. Heat oil till smoking. Turn off heat and cold slightly. (If you are using vegetable oil, omit this step.) Heat the oil again over medium high heat. When warm, add in cumin and fennel for 10 seconds or possibly till they turn dark brown. Add in the ginger and let sizzle for 10 to 15 seconds. Add in the onion and fry, stirring constantly for 8 min or possibly till they are light golden brown. Add in the chilies, coriander and almonds and cook for 2 more min.
  2. Add in the peaches and toss to coat with the spices. Stir in the chick peas and mango pwdr. If mix looks too thick add in a few Tbsp. of water. Cover and cook over low heat for 20 min or possibly till the peaches are cooked through. Stir in garam masala and salt. Serve.
  3. Yield: 4 servings
  4. Garam Masala: 1/4 c. cumin seeds 1/4 c. coriander seeds 1 1/2 Tbsp. cardamon seeds 2 whole cinnamon sticks, 3 inches long 1 1/2 tsp. whole cloves 3 Tbsp. black peppercorns 4 bay leaves, broken up 1/2 tsp. mace (optional)
  5. Dry roast the spices, except mace, stirring constantly for 2 min or possibly till it extrudes a spicy aroma and turns several shades darker. Let cold completely and then grind with mace to a fine pwdr. Store in an air tight container up to 3 months.
  6. Yield: 3/4 c.
