Bologna is my favorite city in Italy. I spent there for a month talking an Italian language & cooking class. I come back to Bologna many times and hope to visit it many more times in the future. Carmelita, I made the Risi e Bisi last night and paired it with an IGT: Visionario (2009) Bianco delle Venezie--talk about a great pairing. I used the option of sugar snap peas and made the puree which I added to the near-finished dish---M-m-m-m-m! So tasty! Again you are spot on with all you prepare and explain. If you get a chance try the wine. The entire meal was based on Spring ingredients, shared with another couple who loved it as much as we did. Love, Susan
