Potato Basque Soup Recipe

• 1 lb Italian sausage, sliced
• 1/2 c. Minced onion
• 2 can (16oz each) tomatoes
• 4 x White potatoes, pared and diced, (6 C)
• 1/4 c. Minced parsley
• 1 c. Diagonally sliced celery
• 2 Tbsp. Minced celery leaves
• 1 1/2 c. Water
• 2 x Beef bouillion cubes
• 1 x Bay leaf
• 1 Tbsp. Salt
• 1/2 tsp Dry leaf thyme
• 1/4 tsp Pepper
• 1 Tbsp. Lemon juice
