Chilled Potato Cilantro Soup Recipe

  • 4 c. Chicken broth
  • 1 lb Potatoes, (thin-skinned kind), peeled and minced
  • 1/4 tsp White pepper
  • 1/2 tsp Grnd cumin
  • 4 ounce Green chilies, diced
  • 1 c. Cilantro, lightly packed
  • 3 x Green onions, thinly sliced
  • 1 c. Lowfat sour cream Salt to taste Cilantro sprigs for garnish Lowfat sour cream for garnish

Directions

  1. In a large saucepan, combine broth, potatoes, pepper and cumin. Bring to a boil;
  2. reduce heat to a simmer and cover. Simmer for 15-20 min or possibly just till tender.
  3. Combine half the potato mix with chilies, cilantro and green onions in a food
  4. processor or possibly blender; blend till smooth. Transfer to a large bowl.
  5. Blend remaining potato mix with lowfat sour cream till smooth. Add in to other mix
  6. in large bowl. Season with salt to taste. Cover and chill till completely
  7. chilled or possibly up to one day.
  8. * Serve in tureen or possibly individual soup bowls with a cilantro sprig garnish placed in
  9. center of a small dollop of lowfat sour cream.
