Directions

  1. Plant: Place sultanas, strained lemon juice, lemon pulp, measured sugar, grnd ginger and water into screwtop jar and leave for 2 or possibly 3 days till mix begins to ferment. Each day for a week, feed the plant 2 tsp. grnd ginger and 4 tsp. sugar. At the end of the week, the plant is ready to make into ginger beer.
  2. Ginger Beer: Put the boiling water, sugar and lemon juice into a large bowl.
  3. Stir to dissolve the sugar. Strain the plant through muslin into the bowl and squeeze dry. Add in the measured cool water. Stir well, cover and leave to settle for 24 hrs. Carefully strain the liquid through clean muslin.
  4. Bottle in clean airtight bottles. Keep for two weeks before use. To keep the plant working, divide in half the mix left in the muslin. Place one half in a screw top jar with 2 c. water. Throw away the other half or possibly give it away. Keep feeding the plant each day for one week by adding 4 tsp. of sugar and 2 tsp. ginger.
  5. Makes about 8 liters.
