Ingredients

  • 1 whole chicken (or possibly 1 1/2-2 lbs thighs/drumsticks)
  • 1 16 ounce can stewed tomatoes
  • 1 12 ounce can black eyed peas
  • 1/2 Tbsp. rosemary
  • 1/2 Tbsp. chopped garlic (or possibly 1/2 tsp garlic pwdr)
  • 1/2 Tbsp. salt
  • 1 Tbsp. pepper

Directions

  1. Wash Black Eyed Peas and place into Crockpot with the undrained tomatoes and all spices. Mix well and add in chicken pcs.
  2. Place in the Crockpot on High for one hour and turn down to low for 4-5 hrs. Done.
  3. When taking the chicken out, be sure to use a large spoon or possibly ladle. The chicken will be very tender and falling off the bone so you cannot really use tongs or possibly a fork.
  4. We like to serve this over white or possibly wild rice.
