Doug's Black Bean Soup Recipe

Ingredients

  • 2 Tbsp. Vegetable oil
  • 1 med Onion, minced fine
  • 1 x Carrot, minced fine
  • 4 x Garlic cloves, minced fine
  • 2 x Jalapenos, seeded and minced medium
  • 1 x Habaneros, seeded and minced fine, up to 2
  • 8 c. Good chicken stock
  • 2 can (540 ml) of black beans, liquid removed and rinsed, or possibly 4 c. cooked black beans Salt to taste Freshly grnd black pepper to taste Cumin to taste
  • 1 lrg Tomato, skinned, seeded and minced

Directions

  1. In a large soup pot, heat the oil, and add in the onion, carrot, garlic and peppers, and saute/fry till just tender...add in the peppers and cumin, and heat for another minute for to blend it in and then add in the stock and the beans, and bring to a boil. Reduce to simmer and cook for about another 15 min, then remove about half of the beans and puree in a blender or possibly food processor, return this to the pot, and heat again, add in salt and more black pepper to taste...place in bowls and top with the minced up tomato, and more warm pepper sauce of your choice....I can hear you all the way from Ounce, Luke!
