This easy prep recipe is made with a curry cream sauce and is served with small bowls of condiments.
Ingredients
- 4 large chicken breasts, boneless, skinless, cut in 1 inch cubes
- 1/4 cup flour
- 1/8 tsp. salt
- 2 tbs. butter + 2 tbs. oil
- 3-4 scallions, chopped
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped celery
- 1/4 cup golden raisins
- 1 tbs. curry powder, Madras preferred, or homemade (see links)
- 3/4 cup chicken stock, homemade preferred
- 1 1/2 cup half and half
- 1/4 tsp. salt
- 1/8 tsp. pepper
- Condiments:
- chopped cilantro
- toasted coconut
- peanuts
- bacon bits
- mango chutney
- chopped green bell peppers
Directions
- Dredge chicken chunks in flour, brown in oil/ butter.
- Remove.
- Saute onions, peppers, celery and raisins in reserved drippings until lightly browned.
- Add curry powder.
- Stir until powder is fragrant, add half and half and stock.
- Simmer 5 minutes, add chicken, salt and pepper.
- Cook 10 minutes more.
- Serve with choice of condiments.
