Easy prep casserole.

If you have leftover chili in the fridge, just sub it for the first 5 ingredients.

  • 1 lb. ground chuck.
  • 1/2 cup chopped onion
  • 1 package taco seasoning, or 1 1/2 - 2 tbs. Tex-Mex Diablo Dust
  • 1 tsp. garlic powder
  • 1/2 tsp. cumin powder
  • 1 cup salsa
  • 1 cup sour cream, divided
  • 1 - 16 oz. can pinto beans, rinsed, or 2 cups homemade (see links)
  • 8 oz. tomato sauce
  • 2 cups pepper jack cheese, or sharp cheddar
  • 4-5 cups crushed your favorite flavored tortilla chips ( I like nacho flavor)
  • Garnish: chopped cilantro

Directions

  1. Heat oven to 350 F.
  2. Cook onions with beef, drain.
  3. Add salsa, tomato sauce, 1/2 of the sour cream, seasonings and beans to the beef.
  4. In a baking dish (2 quart), layer chips, some cheese, beef mix, then more cheese.
  5. Bake 25 minutes.
  6. Top with dollops of sour cream and chopped cilantro.

    I've been looking for a replacement as the one I use is pretty bland. This just might be the one. I'm thinking some chillies as an add, cooking the chuck with chopped onions and garlic and adding some sharp cheddar to the cheese mix.
