Country Captain Chicken Curry Recipe

No one is certain about the origin of this American curry dish. It is known that sea vessels that docked at Low Country ports (South Carolina and Georgia) began arriving with Indian spices in the early 1800s.

Serve this stew over Classic Rice Pilaf or Arturo's Coconut Rice.

Directions

  1. Cook bacon in a Dutch oven on the stove top.
  2. Remove bacon, chop.
  3. Saute onions and peppers in bacon grease over medium heat until golden brown, add garlic and saute 1 minute.
  4. Add dry seasonings and saute until fragrant.
  5. Add veggie mix to bacon.
  6. Toss chicken with flour, salt and pepper.
  7. Pour olive oil into Dutch oven.
  8. Fry chicken over medium high heat until golden brown on both sides.
  9. Pour off all fat.
  10. Add bacon, seasonings, veggies, wine, and all other ingredients to the Dutch oven.
  11. Bring the stew to a boil, cut down to simmer the stew for 30 minutes, turning the chicken pieces occasionally .
  12. While stew is cooking, prepare rice of choice and garnishes.
  13. Salt and pepper to taste.
