Hawaiian Chicken and Rice Recipe

Easy prep chicken thighs baked in orange pineapple sauce. Serve over your favorite rice.

  • 6-8 skinless chicken thighs
  • 1 cup orange pineapple juice
  • 1/3 C soy sauce
  • 1/2 C brown sugar
  • 1 tsp. ginger powder
  • 3 T vinegar
  • 3 T ketchup
  • dash Tabasco
  • 2 cloves minced garlic or 1 tsp. garlic powder
  • 1 T cornstarch mixed with 1 T cold water
  • garnish: sesame seeds and minced scallions

Directions

  1. Turn oven on to 375 degrees.
  2. Mix juice and the rest of the ingredients together, except the corn starch and pour over the thighs.
  3. Cover and bake 45 minutes, turning thighs once.
  4. Remove cover and add cornstarch/water slurry to the pan and stir.
  5. Bake another 15 minutes.
  6. Serve on a bed of rice and sprinkle on sesame seeds and scallions.
