  1. Place flour in a large mixing bowl, cut in shortening till mix is mealy. Stir in buttermilk, egg white, and salt, working with mix till the dough pulls away from the sides of the bowl. Divide dough into approximately 2-inch balls, roll out on lightly floured board into 6-inch rounds.
