Tex-Mex Pasta Bake Recipe

  • 12 oz. cooked, lightly salted pasta, tossed with a bit of olive oil or butter
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 packet taco seasoning
  • 1/2 tsp garlic powder
  • 1/4 C water
  • 1 small can mild green chiles
  • 1 tsp. cumin
  • 14. 5 oz. can fire roasted tomatoes, drained
  • 15 oz can red enchilada sauce - if you want less heat, use tomato sauce, instead
  • 2 C Mexican cheese blend, or pepper Jack, divided.
  • optional: 6-8 oz. cubed Velveeta
  • garnish: black olives, cilantro, chopped scallions

Directions

  1. Heat oven to 350 degrees.
  2. Cook beef, drain, and set aside.
  3. Cook onions until golden brown.
  4. Line a 9x13 pan with foil for easy clean up.
  5. Put the pasta in the pan.
  6. In a bowl mix all the ingredients together, holding back 1 C of the cheese and the Velveeta.
  7. Pour on top of the pasta, and press it down.
  8. Dot the top with Velveeta and rest of cheese.,
  9. Cover and bake 20 minutes.
  10. Remove the cover and bake another 10 minutes.
  11. Remove from the oven and let sit 15-20 minutes.
  12. Top with garnishes and serve.
