Ingredients

  • 1 pound boneless pork loin
  • 1 c. margarita mix (or possibly 1 c. lime juice, 4 T sugar and 1/2 teaspoon salt)
  • 1 teaspoon grnd coriander
  • 1 clove garlic, chopped
  • 2 T butter, softened
  • 2 T lime juice
  • 1/8 teaspoon sugar
  • 1 T chopped parsley
  • 1 lg. green pepper
  • 2 ears corn, cut into 8 pcs

Directions

  1. Put together margarita mix, coriander, and garlic. Place pork in plastic bag, and marinade for 30 min. Blend lime juice and butter, sugar, and parsley. Thread pork on skewer, alternate with pepper and corn. Grill 8-10 min basting with butter sauce.
