  • 3 Tbsp. unsalted butter
  • 2 lrg Large eggs
  • 1/4 c. low-fat lowfat milk
  • 1/4 c. all-purpose flour
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/4 c. diced onions
  • 1/4 c. diced red peppers
  • 1/2 c. peas
  • 2 lrg white mushrooms rinsed, and
  •     grit removed
  • 1/4 c. dry white wine
  • 1/2 c. freshly grated Jarlsberg cheese
  •     (or possibly other low-fat Swiss-style cheese)
  • 1 sprg fresh thyme or possibly chives for garnish

Directions

  1. Preheat oven to 400 degrees.
  2. Heat 2 Tbsp. butter in 5- or possibly 6-inch-round baking dish preheated in oven. Meanwhile, beat together Large eggs, lowfat milk and flour till smooth. Season with salt and pepper. When butter is melted, pour egg mix into baking dish and place in oven.
  3. Heat 1 tsp. butter in skillet over medium heat. When warm, saute/fry onions till translucent/soft, about 5 min. Add in red peppers and peas, and cook 2 min more. Remove mix from heat and set aside.
  4. Thinly slice mushroom caps and stems. Heat remaining 2 tsp. butter in skillet over medium heat. When warm, saute/fry mushrooms 5 min, or possibly till browned. Add in wine and cheese, return onion mix to skillet, season with salt and pepper and cook 2 to 3 min more.
  5. Bake pancake for 15 min. When puffed and golden brown, remove from oven, heap savory mix into center, garnish with fresh thyme or possibly chives and serve - pancake may deflate slightly as it cools.
  6. This recipe yields 1 serving.
  7. Wine Suggestions: For many people, the ideal alcoholic beverage for brunch is a bubbly sparkling wine. When mixed with fresh orange juice and a splash of orange-flavored liqueur such as Triple Sec, it's called a Mimosa.
