  • 1/4 c. canola oil
  • 2 Tbsp. red wine vinegar
  • 2 Tbsp. controlled carb ketchup
  • 1 pkt sugar substitute
  • 1/2 tsp Dijon mustard
  • 1 x green onion minced Salt to taste
  • 6 c. mesclun salad greens
  • 1 sm cucumber peeled, seeded, and thinly sliced

Directions

  1. For dressing, combine oil, vinegar, ketchup, sugar substitute, mustard and green onion in a blender and blend till smooth. Add in salt to taste.
  2. Toss greens and cucumber with dressing; divide on 4 plates.
  3. This recipe yields 4 servings.
