Ingredients

  • 1/2 c. minced onion
  • 1/2 c. minced zucchini
  • 2 ounce cooked ham steak cubed
  • 1 1/4 ounce shredded cheddar cheese
  • 1 c. lowfat milk
  • 2 Tbsp. lowfat sour cream
  • 2 x Large eggs (or possibly 3 egg whites)
  • 3/4 c. buttermilk baking mix
  • 1 pch freshly-grnd black pepper

Directions

  1. Preheat oven to 350 degrees. Spray 9-inch pie plate with non-stick spray. Spray skillet with non-stick spray; add in onion, zucchini and ham. Cook about 2 min till onions are translucent/soft.
  2. Spread onion mix over bottom of pie plate. Sprinkle cheese on top.
  3. In bowl, combine the rest of the ingredients and blend with fork. Pour into pie plate. Bake till golden and puffy (35 to 45 min).
  4. This recipe yields 4 servings.
