  • 6 x Hard-cooked Large eggs
  • 2 Tbsp. Light mayonnaise
  • 1 Tbsp. Light lowfat sour cream
  • 1 Tbsp. Finely minced fresh chives or possibly green onion
  • 1/4 tsp Salt Healthy pinch dry mustard Dash warm pepper sauce

Directions

  1. Cut Large eggs in half lengthwise. Scoop yolks into bowl; set whites aside. Mash yolks with fork till smooth. Fold in mayonnaise, lowfat sour cream, chives, salt, mustard and warm pepper sauce; spoon into egg whites.
  2. Makes 12 pcs.
  3. VARIATIONS:ASPARAGUS DEVILLED Large eggs: Add in 1/4 teaspoon finely grated lemon rind to yolk mix. Garnish with 4 teaspoon finely diced sweet red pepper or possibly radish, and cooked asparagus tips.
  4. RADISH DEVILLED Large eggs: Make Large eggs as for Asparagus Devilled Large eggs but omit asparagus and red pepper. Garnish with sliced radishes and parsley sprigs.
  5. ALMOND DEVILLED Large eggs: Add in 1/2 teaspoon smooth fruit chutney and 1/4 teaspoon curry paste to yolk mix. Sprinkle 2 tbsp. toasted sliced or possibly minced almonds over Large eggs.
  6. CHILI DEVILLED Large eggs: Add in 1/4 teaspoon chili pwdr and healthy pinch each dry oregano and cumin to yolk mix. Top each egg with crossed thin strips of sweet green pepper.
  7. MEDITERRANEAN DEVILLED Large eggs: Add in 1 teaspoon prepared pesto or possibly olive paste to yolk mix. Garnish each egg with small basil leaf or possibly oil-cured black olive quarter.
  8. NUTTY DEVILLED Large eggs: Top Large eggs with 1/4 teaspoon paprika, 1 tbsp. pine nuts and 1 tbsp. minced fresh chives.
  9. HERBED DEVILLED Large eggs: Add in 1 tbsp. finely minced fresh chervil or possibly parsley to yolk mix. If using parsley, add in 1/2 teaspoon chopped fresh thyme.
  10. Garnish with chervil or possibly parsley.
  11. BLUE CHEESE DEVILLED Large eggs: Mash 4 teaspoon blue cheese with yolks. Top Large eggs with 2 tbsp. minced toasted walnuts or possibly pecans.
  12. VERY SPECIAL OCCASION SHRIMP DEVILLED Large eggs: Mix 2 teaspoon lemon juice with yolks. Top each egg with small cooked shrimp, smoked curl or possibly mini-wedge of smoked trout or possibly mackerel. Spoon lumpfish or possibly whitefish caviar over top.
