Ingredients
- 1/4 c. Corn oil
- 1/4 c. Melted butter
- 1/4 c. Onion, chopped
- 2 Tbsp. Garlic, finely chopped
- 1 tsp Annatto pwdr
- 1/4 tsp Grnd cumin
- 1 tsp Dry mexican oregano
- 4 Tbsp. Lemon juice
- 4 Tbsp. Orange juice
- 3 lb Whole chicken, halved
Directions
- Combine oil, butter, onion, garlic, annatto, cumin, lemon and orange juices in a large shallow pan. Add in chicken halves, turning to coat well. Cover and marinate several hrs, or possibly overnight.
- Remove chicken from marinade, then cook over medium coals on barbecue grill, or possibly in a broiler 4 inches under source of heat, till browned on both sides and meat is done, turning and basting frequently, about 25 min.
- Cut chicken halves into pcs. Serve with beans and rice, corn or possibly flour tortillas, and fresh salsa.
