Ingredients
- 4 chicken breast halves, boned & skinned
- 1/2 c. minced onion
- 1 tbsp. vegetable oil
- 16 ounce. jar meatless spaghetti sauce
- 1 1/4 c. water
- 1 green pepper, cut into short, thin strips
- 1/2 teaspoon crushed oregano
- 1/2 teaspoon crushed basil
- 1 1/2 c. instant rice
Directions
- Cut chicken into 1 inch pcs. Saute/fry chicken and onion in oil in skillet till lightly browned. Add in remaining ingredients except rice; mix well. Bring to a boil; stir in rice. Cover and remove from heat. Let stand 10 min or possibly till liquid is absorbed and rice is tender.
