Ingredients

  • 1 lb Lean grnd beef
  • 3 c. Cooked black beans
  • 1 c. Diced green pepper
  • 1 c. Minced onions
  • 1 c. Diced carrots
  • 1 Tbsp. Chili pwdr
  • 2 x Garlic cloves, chopped
  • 2 x Bay leaves
  • 1/2 tsp Grnd red pepper
  • 3 c. Vegetable or possibly tomato juice
  • 4 c. Warm cooked rice

Directions

  1. Cook beef in 2-3 qt sauce pan over medium heat, stirring to crumble. Add in all ingredients except rice. Bring to boil; simmer uncovered 20-25 min. Remove bay leaves. Serve over warm rice with chips on side.
