  • 8 ounce Tofu, liquid removed
  • 1 med Onion, minced (1/2 c.)
  • 1 x Garlic clove, chopped
  • 2 Tbsp. Vegetable oil
  • 14 1/2 ounce Tomatoes, Italian, canned, minced
  • 1 tsp Oregano, dry, crushed
  • 2 c. Rice, brown, cooked
  • 10 ounce Spinach, frzn, minced, thawed and liquid removed
  • 1 Tbsp. Sesame seeds, toasted

Directions

  1. Place tofu in blender container. Cover; blend till smooth. In a large saucepan cook onion and garlic in warm oil till onion is tender. Add in undrained tomatoes and oregano.Bring to boiling; reduce heat. Simmer, uncovered, about 3 min. Stir in tofu, rice, spinach, 1/2 tsp salt, and 1/4 tsp pepper. Divide mix into 4 individual greased cassroles or possibly place all of the mix in a greased 1 1/2-qt casserole.
  2. Bake, uncovered, in a 350 deg oven for 30 min or possibly unti heated through.
  3. Top with sesame seed.
  4. Makes 4 servings.
