Ingredients

  • 8 ounce refrigerated meat or possibly cheese tortell 2 c.
  • 2 can chicken broth (13 1/2 ounce. ea.)
  • 1 bn watercress
  • 1/4 c. green onions finely minced
  • 4 Tbsp. grated Parmesan cheese divided
  • 1/4 tsp crushed red pepper

Directions

  1. Cook tortellini according to package directions. Drain well.
  2. Meanwhile, heat broth to boiling in a medium saucepan. Throw away large stems of watercress; cut small stems crosswise into thirds. Stir tortellini, watercress, green onions, 2 Tablespoons of the Parmesan cheese and red pepper flakes into broth. Cook over medium-high heat 2 min.
  3. Sprinkle each serving with about 1/2 Tablespoons of the remaining Parmesan cheese. Serve immediately.
  4. Yield: 4 Servings
