Aromatic and quick to prepare! A great side dish.
Ingredients
- 2 tablespoons cooking oil, or as needed
- 2 large red potatoes, whole
- 1 teaspoon vegetable oil
- 2 cups cilantro, chopped fresh
- 1 clove garlic, minced or pressed
- 1/2 teaspoon cumin
- 1 tablespoon fresh lemon juice
- salt and pepper, to taste
- 2 green onion, sliced, for garnish
Directions
- 1. Puncture the potatoes with a fork and microwave about 5 minutes until fairly well done but not mushy. Cool the potatoes and cut into small cubes.
- 2. Heat the oil in a skillet over medium heat. saute the potatoes until they beggin to brown nicely, then and add cilantro and garlic; cook and stir for about 5 minutes. Add the cumin, lemon juice and season with the salt and pepper. Stir to coat the potatoes, garnish with the green onions and serve.
- 3. *If you like things a little spicy you can add finely chopped and seeded jalapeño pepper to the potatoes when sauteeing.
