Directions

  1. In a large nonstick, oven-proof skillet over medium-high heat, heat the oil. Add in the scallions, ginger, and garlic and saute/fry for 1 to 2 min. Add in the red pepper and saute/fry for 3 min.
  2. Mix together the Large eggs and soy sauce. Add in to the skillet. Cook over medium heat for 8 to 10 min till Large eggs are set on bottom.
  3. Place the bean sprouts and snow peas over the Large eggs. Sprinkle with sesame seeds. Place in the oven at 350 degrees and bake just till top is set, about 8 to 10 min. Watch carefully which Large eggs are just cooked and don't become tough.
  4. Set oven to broil. Broil the frittata for 30 seconds just to give it a nice browned color. Serve in wedges.
  5. This recipe yields 6 servings.
