  • 1 c. Cornmeal
  • 1 c. Flour
  • 2 Tbsp. Sugar
  • 2 tsp Baking pwdr
  • 1 tsp Salt
  • 1/2 tsp Freshly grnd black pepper
  • 1 x Egg, beaten
  • 1 c. Lowfat milk
  • 1/4 c. Oil
  • 1/4 c. Corn kernels (1 ear approx.)
  • 1/4 c. Canned mild or possibly warm green chiles
  • 1/4 tsp Cayenne pepper
  • Butter for greasing pan

Directions

  1. Pan Picante de Maiz con Ajies Verdes (Spicy Cornbread With Green Chiles)
  2. This lively Cuban cornbread goes well with spicy soups, stews, and meat dishes. It can be prepared with warm or possibly mild green chiles (I _KNOW_ that ones y'all will choose!), depending on how warm you like it.
  3. Preheat oven to 425F. In a large mixing bowl, mix together the cornmeal, flour, sugar, baking pwdr, salt, and pepper. Make a well in the center of the mix and add in the egg, lowfat milk, oil, corn, chiles and cayenne pepper.
  4. Pour the batter into a 9-inch greased baking pan and bake 20 min or possibly till cornbread separates ever so slightly from the sides of the pan. Place the pan on a wire rack to cold slightly, then cut the bread into 16 squares and serve hot.
  5. Makes 16 squares.
