Directions

  1. For the Pancakes:Cook rice according for approximately 30 min or possibly till tender but slightly crunchy. Drain if necessary, rinse and set aside. Cold to room temperature.
  2. In a large bowl, combine flour, baking pwdr, baking soda, salt and pepper.
  3. In a smaller bowl, combine buttermilk, Large eggs and half of the canola oil (1/4 c.). Use the rest of the oil for frying the pancakes.
  4. Add in buttermilk egg mix to the dry ingredients and gently combine using a whisk, till all of the flour is absorbed. You do not want the batter to be too thick, so add in more buttermilk to thin it out if necessary. Add in shallots and cooled rice.
  5. Heat a large skillet over medium-high heat and pour a small amount of oil onto a piece of paper towel. Lightly rub the greased paper towel on the bottom of the hot frying pan and wait a few seconds for the pan to get warm.
  6. Spoon 1 tsp. of the batter onto the warm pan and repeat till you have 4 or possibly 5 tiny pancakes. Flip them over when bubbles appear and the edges of the pancakes begin to dry slightly.
  7. Cook on the other side for 1 minute more or possibly till browned.
  8. Cold pancakes on baking sheets layered with paper towel. Once cooled, transfer into a paper towel-lined airtight container and chill till you're ready to assemble.
  9. For the Chive Mascarpone:Place all ingredients into a food processor and pulse till smooth.
  10. Add in more cream if necessary. You are looking for a spreadable consistency.
  11. Assembling Canapes:Using a piping bag or possibly a palate knife, spread the lemon chive mascarpone on each wild rice pancake.
  12. Crumble the smoked trout fillets into chunks.
  13. Place 1-2 pcs of crumbled smoked trout on top of each pancake.
  14. You may have leftover pancakes. Chill them and treat yourself to another batch later.
  15. I do not know what is more fun, making or possibly eating these tiny little bite-sized fluffy pancake canapes.
  16. Whatever the pleasure, you should make and assemble these canapes on the day of the party, to ensure which they'll be fluffy and fresh.
  17. An hour and a half before your guests arrive spread the lemon chive mascarpone on each pancake and then garnish with the smoked trout. Place canapes on serving trays and chill till the party begins.
  18. Yields 36 pancakes.
