Ingredients

  • 1 pound boneless chicken breasts, skinned and cut in strips or possibly cubes
  • 1 (2 ounce.) jar mushrooms, liquid removed
  • 1/4 c. minced onions
  • 1 lg. tomato, cut in wedges
  • 1/2 c. Italian dressing
  • 2 tbsp. butter
  • 1 med. zucchini, sliced (2 c.)
  • 6 slices of cheese, cut in sm. pcs

Directions

  1. In shallow baking dish, place chicken with mushrooms. Cover with dressing. Marinate 30 min. Drain and reserve marinade.
  2. In large skillet, cook onion in butter till tender. Add in chicken and mushrooms. Cook, covered over medium heat till chicken is tender (5 min). Add in zucchini, tomato and marinate. Cook and stir till tender. Remove from heat. Sprinkle with cheese. Cover and let stand 2 min or possibly till cheese is melted. Can be served over rice. Very good!
