  • 3 lbs Russet Potatoes (3 to 4 large)
  • 5 Tbsp (2 ½ oz) Unsalted Butter, 1 Tbsp softened and 4 Tbsp (2 oz) cut into ½-inch cubes
  • Canola Oil
  • 2 Thyme sprigs
  • 2 Garlic Cloves, lightly crushed, skin left on
  • Minced Chives (optional)
