Directions

  1. Slice thinly on meat slicer or possibly mandolin, all potatoes. Grease or possibly pan spray 8-inch loaf pan.
  2. Beginning with Idahos, layer bottom of pan, slightly overlapping. Top with thin layer of onion followed by cheese. Repeat process with Yukon Golds and sweet potato till reaching 1 inch from top of pan.
  3. Preheat oven to 350 degrees and fill second bread pan with dry beans (this pan will be used as a weight on top of the potato pan). Place potato pan with weight pan on top, in center oven rack. Bake for 45 min till potatoes are tender.
  4. Remove from oven and cold under refrigeration for 4 hrs till cool. Carefully remove from bread pan and slice into 1 1/2-inch segments. Reheat in oven.
  5. Comments: Pave is French for pavement or possibly paving stone, such as the shape and look of this final product.
