Potato Parsnip Salad With Aquavit Dressing Recipe

Ingredients

  • 3/4 c. mayonnaise
  • 7 Tbsp. aquavit
  • 3 Tbsp. white wine vinegar
  • 1/2 med red onion thinly sliced
  • 1 1/2 tsp caraway seeds
  • 1 1/2 lb baby red potatoes (about 18), halved
  • 1 lb medium parsnips peeled, cut into 1/4-inch-thick slices

Directions

  1. Whisk mayonnaise, 3 Tbsp. aquavit and vinegar to blend in medium bowl. Season to taste with salt and pepper. Transfer 1/4 c. dressing to
  2. small bowl and reserve. Add in onion and caraway to dressing in medium bowl.
  3. Mix well and let stand 30 min.
  4. Steam potatoes over boiling water till tender, about 15 min.
  5. Transfer to large bowl. Gently fold in 2 Tbsp. aquavit. Steam parsnips till just tender, 4 to 5 min. Place atop potatoes in bowl.
  6. Sprinkle with remaining 2 Tbsp. aquavit. let cold 15 min. Pour
  7. onion-dressing mix over and stir gently. Moisten with reserved dressing if you like. Season generously with salt and pepper. Serve slightly hot or possibly at room temperature.
  8. Serves 4 to 6.
