Ingredients

  • 5 x Big potatoes, finely grated
  • 1 lrg Onion, finely grated
  • 2 x Large eggs
  •     Salt and pepper to taste
  • 1/8 c. Oil
  •     Sufficient flour to make a medium-thick pourable batter

Directions

  1. Preheat oven to 350F. Pour about 1/4 inch oil into a 9x13 inch glass pan.
  2. Mix all above ingredients till well combined. Pour batter into pepared pan. Oil will rise and lay on top of batter. Bake 45-60 min till knick is proportionately browned all over, top is crusty and sides pull away from pan.
  3. We eat this as a side dish. Our favorite way to eat it is slathered with butter with a nice crunchy apple (preferably a McIntosh) on the side and a c. of warm coffee. Enjoy
