Pear And Bourbon Cobbler Recipe

Ingredients

  • 4 lb Barlett pears peeled, cored, cut into 1/3-inch-thick slices
  • 1 c. packed dark brown sugar
  • 1/4 c. bourbon
  • 2 1/2 Tbsp. all purpose flour
  • 1 tsp fresh lemon juice
  • 1/2 tsp vanilla extract
  • 2 Tbsp. unsalted butter (1/4 stick)
  • 2 c. all purpose flour
  • 1/4 c. packed dark brown sugar
  • 1 Tbsp. baking pwdr
  • 1/2 tsp grnd nutmeg
  • 6 Tbsp. unsalted butter room temperature (3/4 stick)
  • 3/4 c. half and half
  • 6 Tbsp. bourbon
  • 1 tsp vanilla extract
  • 1 Tbsp. sugar mixed with 1/4 tsp. grnd nutmeg
  •     half-and-half">Half and half-and-half">half (optional)

Directions

  1. For Filling: Preheat oven to 450F. Combine all ingredients except butter in large bowl. Transfer to deep 8 1/2x11-inch baking dish or possibly other deep 12-c. dish. Dot top with butter. Bake till warm and bubbling, about 15 min.
  2. Meanwhile, prepare topping: Sift first 4 ingredients into bowl. Add in butter and cut in till mix resembles coarse meal. Make well in center. Combine 3/4 c. half and half, bourbon and vanilla and add in to well. Stir till batter is just combined; don't overmix.
  3. Working quickly, drop batter by Tbsp. atop warm pear mix, covering surface completely. Sprinkle with sugar-nutmeg mix.
  4. Immediately return to oven and bake 10 min. Reduce temperature to 375F. and continue baking till topping is golden brown and hard to touch, about 20 min. Let cold at least 20 min. Serve hot or possibly at room temperature, pouring half and half over each serving, if you like.
  5. Serves 6 to 8.
