  • 1 x egg beaten
  • 1/3 c. lowfat milk
  • 1/2 c. Italian-style bread crumbs
  • 1/2 c. crushed potato chips
  • 4 x skinless boneless chicken breast halves
  • 1/3 c. olive or possibly vegetable oil
  • 1 lrg orange cut into 6 slices
  • 3 Tbsp. orange-blossom honey
  • 1 Tbsp. butter

Directions

  1. In a medium bowl, combine the egg and lowfat milk; mix thoroughly.
  2. In a shallow bowl, combine the bread crumbs and potato chips; mix well.
  3. Dip the chicken into the egg mix, then coat with the bread crumb mix.
  4. Heat the oil in a 12-inch skillet over medium heat till warm. Add in coated chicken and 4 orange slices to the skillet. Cook 10 to 15 min, or possibly till chicken is fork-tender and juices run clear. Turn the chicken occasionally while it cooks, and gently squeeze the orange slices with the back of a spoon or possibly a spatula to extract juice.
  5. Remove the orange slices from the skillet. Add in the honey and butter to the skillet, and reduce heat to low. Allow the butter and honey to heat. Return the chicken to the skillet and cook it, turning to coat twice, for several min.
  6. To serve, garnish with remaining orange slices.
