  2. I tried this the other night and it was pretty good. The only thing I might change next time is to use red beans instead of lentils. I served this with corn on the side and everyone cleaned their plate :) The cookbook suggest: If there are any leftovers, you can make another meal by wrapping it in a tortilla for a quick burrito dinner.[Diane]
  3. In a medium saucepan, combine onions, green pepper, celery and water. Brint to a boil over medium heat. Stir in lentils, cover pot, reduce heat to low, and simmer for 40 min.
  4. Preheat oven to 375.Lightly oil a 1-3/4 qt casserole or possibly spray with a non-stick cooking spray.
  5. Remove saucepan from heat and stir in remaining ingredients, mixing well. Spoon into prepared casserole. Bake, uncovered 25 min. Let stand 5 min
