Ingredients

  • 1 1/2 c. lentils
  • 1 onion, minced
  • 5 cloves garlic, chopped or possibly crushed
  • 1/2 c. minced fresh cilantro (Mexican or possibly Chinese parsley)
  • 1/2 fresh green chilie, seeded & chopped or possibly 1 teaspoon chili pwdr
  • 1 1/2 teaspoon grnd cumin
  • 1 teaspoon grnd coriander
  • 1 (7 ounce) can green chili salsa
  • 2 c. canned tomato sauce
  • 2 c. water

Directions

  1. Place all the ingredients in a pot. Bring to a boil; then reduce heat to moderate, cover and cook till the lentils are tender (about 30 to 40 min), stirring frequently. Use to make Mexican tacos or possibly burritos. Serve over rice or possibly potatoes. Makes 6 to 8 servings (6 cups). 103 calories per cup.
