Ingredients
- 1 x heaping Tbsp. finely minced onion
- 2 tsp Dijon mustard
- 1/4 c. tarragon vinegar
- 1 tsp honey
- 1 Tbsp. water
- 1 tsp fine sea salt
- 1/8 tsp freshly grnd black pepper
- 2 dsh Tabasco sauce
- 2 Tbsp. extra-virgin extra virgin olive oil
- 1/2 c. canola oil
Directions
- 1. In a small bowl, crush the minced onion to a puree with a fork. Add in the mustard, vinegar, honey, water, salt, pepper and Tabasco; whisk till the ingredients bind.
- 2. Gradually whisk in the olive and canola oils till the ingredients are emulsified. Taste and adjust the seasonings.
- Note: If making the vinaigrette in advance, omit the onion and refrigeratethe dressing. Just before serving, add in the onion and whisk till blended.
