Ingredients

  • 1 x heaping Tbsp. finely minced onion
  • 2 tsp Dijon mustard
  • 1/4 c. tarragon vinegar
  • 1 tsp honey
  • 1 Tbsp. water
  • 1 tsp fine sea salt
  • 1/8 tsp freshly grnd black pepper
  • 2 dsh Tabasco sauce
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 1/2 c. canola oil

Directions

  1. In a small bowl, crush the minced onion to a puree with a fork. Add in the mustard, vinegar, honey, water, salt, pepper and Tabasco; whisk till the ingredients bind.
  2. Gradually whisk in the olive and canola oils till the ingredients are emulsified. Taste and adjust the seasonings.
  3. Note: If making the vinaigrette in advance, omit the onion and refrigeratethe dressing. Just before serving, add in the onion and whisk till blended.
