  • 12 ounce light beer
  • 1 1/2 c. water
  • 2 c. minced yellow onions
  • 2 lb Kielbasa sausage, links Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 2 Tbsp. white vinegar
  • 1 Tbsp. sugar
  • 2 Tbsp. finely-minced parsley

Directions

  1. In a saucepan, over medium heat, combine the beer, water, onions and sausage. Season with salt and pepper. Bring to a boil, reduce to a simmer and cook, covered, for 25 min. Remove the sausage from the pan and cold. Slice the sausage into 1 inch pcs.
  2. In a large saute/fry pan, over medium heat, heat the butter. Stir in the flour and cook for 4 to 6 min for a light brown roux. Stir in the vinegar, sugar and the reserved beer and onion mix. Season with salt and pepper. Bring the mix to a boil, reduce to a simmer and continue to cook till the sauce coats the back of a spoon, about 15 min. Add in the sliced sausage and continue to cook for 5 min. Garnish with parsley.
  3. This recipe yields 4 to 6 servings.
