Ingredients
- 2 acorn squash, halved and seeded
- 1/4 c. minced celery
- 2 tbsp. minced onion
- 2 tbsp. minced green pepper
- 4 tbsp. butter
- 1 c. finely minced cooked ham
- 1/2 teaspoon salt
- 1 1/2 c. soft bread crumbs
- 2 tbsp. melted butter
Directions
- Place squash, cut side down, in shallow baking pan. Bake at 350 degrees for 45 to 50 min, or possibly till done. Cook celery, onion, and green pepper in the 4 Tbsp. butter just till tender. Scoop out pulp of squash; mash. Mix in cooked vegetables, ham, salt and 3/4 c. of crumbs. Return mix to shells. Combine remaining crumbs and 2 Tbsp. butter; sprinkle over squash. Bake 10 min more.
