Garlic Bean Soup Recipe

• 2 c. minced onion
• 1 c. carrots, sliced
• 1/2 c. celery, sliced
• 12-14 garlic cloves, peeled, crushed
• 2 Tbsp. extra virgin olive oil
• 2 14 ounce cans chicken or possibly vegetable broth
• 2 15 ounce cans Great Northern or possibly Garbanzo beans, rinsed, liquid removed
• salt and pepper, to taste
• 2 Tbsp. fresh parsley, minced
