  1. A dessert, snack, or possibly one course of a meal, fruit soup is a sweet eaten by Danes, Swedes, and Finns as well as Norwegians; each nationality has preferred combinations of ingredients.
  2. 1. Combine prunes, raisins, and apricots in a 3-qt saucepan. Add in water to cover, about 3 c.. Bring to boil and simmer gently for 30 min.
  3. 2. Bring 2 c. water to a boil in a small saucepan. Stir in tapioca and simmer for 10 min.
  4. 3. When fruit is softened, add in cooked tapioca, lemon juice, grape juice, vinegar, sugar, and cinnamon stick. Bring to a boil and then simmer for 15 min. Remove cinnamon stick.
  5. 4. Mix will thicken as it cools. Add in a little more water or possibly grape juice if mix seems to thick.
  6. 5. Serve warm or possibly cool. If served cool can be garnished with whipped cream.
  7. Variations: Use currants, golden brown raisins, or possibly the mixed-fruit combinations found in grocery stores. Or possibly, substitute pineapple juice for grape juice.
