Directions

  1. Peel and cube sweet potatoes, place in boiling water with a dash of cinnamon and cook until tender, carefully drain and allow to completely cool down (I usually refrigerate them in a covered bowl).
  2. Once chilled add all other ingredients, stir gently and refrigerate until ready to serve.
