Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 2 x Garlic cloves peeled and crushed
  • 2 med Yellow onions peeled and sliced
  • 8 x Chicken thighs Salt to taste Freshly-grnd black pepper to taste
  • 2 c. Plain yogurt
  • 1 Tbsp. Minced parsley Sumac or possibly zartar see * Note

Directions

  1. * Note: May be found in Middle Eastern markets.
  2. Heat a large frying pan and add in 2 Tbsp. of the oil. Add in the garlic and onion and saute/fry till the onion is tender. Don't brown.
  3. Season the chicken with salt and pepper to taste. Heat another frying pan and add in the remaining 1 Tbsp. of oil.
  4. Brown the chicken on both sides and remove to a 13-by-9-inch glass baking dish.
  5. When the onions are tender stir in the yogurt and parsley off the heat. Salt and pepper to taste.
  6. Pour the mix over the chicken thighs and bake at 375 degrees for 35 min. Garnish with sumac or possibly zartar.
  7. Comments: While this dish is terribly easy and quick to prepare, it has sufficient depth of flavor for a fine dinner party.
