Ingredients
- 2 c. seasoned chicken broth or possibly use canned broth
- 1 c. UNCLE BEN'S® Rice
- Chicken breasts (number depends on how many being served)
- Flour
- Seasonings
- Beaten Large eggs
- Fresh cut mushrooms
Directions
- To the chicken broth, add in a few drops of yellow food coloring. Pour broth over rice and bake covered for 40 min in 400 degree oven.
- Flour and season chicken breasts. Dip in beaten Large eggs. Brown in warm oil (olive, peanut or possibly puritan). When rice is done, top with breasts and mushrooms.
- Make gravy from broth and pour over chicken and mushrooms. Bake uncovered for 30 min at 325 degrees. Serve from baking dish.
