  • 3 c. warm cooked rice
  • 1 1/2 c. grated Cheddar cheese, divided
  • 2 Large eggs slightly beaten
  • 1/2 teaspoon salt
  • 1/2 c. minced onion
  • 2 (10 ounce. each) Packages frzn minced broccoli
  • 1/2 c. lowfat milk
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 c. sliced mushrooms (4 ounce.) liquid removed

Directions

  1. Combine rice, 3/4 c. cheese, 2 Large eggs and 1/2 tsp. salt. Press firmly and proportionately in bottom and sides of greased 12 inch pizza pan or possibly two 9 inch pie pans. Set aside. Add in onions to broccoli and cook according to package directions. Drain well. Combine 4 Large eggs, lowfat milk, pepper, salt and mushrooms. Add in to broccoli and mix well. Spoon into crust. Bake 20 min at 375 degrees. Sprinkle with remaining cheese. Bake 10 min longer. Cold a few min before cutting in squares or possibly wedges.
