  • 1 box Jiffy corn muffin mix
  • 1 onion, grated
  • 3 large eggs, beaten
  • 1 (10 ounce) pkg. minced broccoli
  • 8 ounce lowfat sour cream
  • 1 stick butter

Directions

  1. Heat butter in 5"x9" Pyrex dish. Mix large eggs, onion and lowfat sour cream together. Drain broccoli; add in to the cornbread muffin mix. Pour into Pyrex dish and bake at 375 degrees for 35 min.
