Basic Cranberry Muffins Recipe

Ingredients

  • 3/4 c. cranberries halved
  • 1/2 c. confectioners sugar
  • 2 c. flour
  • 1 Tbsp. baking pwdr
  • 1/2 tsp salt
  • 1/4 c. sugar (To 1/3)
  • 1 x Egg Beaten
  • 1 c. lowfat milk
  • 1/4 c. butter melted

Directions

  1. Toss berries with confectioners sugar and set aside. Sift dry ingredients together and make a well in mix. Add in Large eggs, lowfat milk and butter all at once. Stir lightly till the dry ingredients are moist. Don't beat. Mix in berries and pour into greased muffin pan 2/3 full. Bake at 350 degrees for 30 min. 12 muffins. [email protected]
